Oven baked fries
Preparation time: 10 minutes
2-3 Tbsp (30-45 mL) Maison Orphée Sunflower Oil for Cooking
Preheat oven to 200oC (400oF). Place rack in center of oven.

1 whole egg
In a small food processor, mix the egg, mustard and sea salt with the processor still running, add the oil, drop by drop until the mixture begins to thicken. Without stopping the machine, add the remaining oil in a thin stream. When the oil has been incorporated, slowly add the cider vinegar. Adjust the seasoning.
Replace sea salt by Maison Orphée fine sea salt or with herbes de Provence. Replace apple cider vinegar by the same amount of Maison Orphée white wine vinegar. For honey mustard mayonnaise add honey and Maison Orphée Old-fashioned mustard to taste. For a low calorie mayonnaise, add plain Greek yogurt.
