Apple and pine nuts salad with Pied de vent cheese

Ingredients

1 raddichio
1 green lettuce
1 apple, thinly sliced
Juice of ½ lemon
¼ cup (40 g) of pine nuts, lightly roasted
100 g of Pied de vent cheese from Magdalen Islands (or other soft washed rind cheese), chopped in small pieces
5 Tbsp (75 mL) Maison Orphée Organic Sunflower oil
2 Tbsp (30 mL) Orphée Organic Apple Cider vinegar
Sea salt and ground pepper to taste

Preparation

Wash and dry both lettuces and place in a salad bowl. Slice the apple thinly and mix with the lemon juice. Mix the oil with the vinegar, salt and pepper. Pour the vinaigrette over the salad, add the apples, the pine nuts and the cheese and toss well. Bon appetit !
